Combating food waste
Food waste is a well-known issue in many restaurants. Think of oversized portions, products that expire, or simply buying too much. It happens faster than you’d think, and all while good food ends up in the trash unnecessarily. At Gys, we are very aware of this and take active steps to prevent it.
How do we tackle this at Gys?
We make as much use as possible of the entire product. For example, we make broth from vegetable scraps and peels such as the tops and bottoms of carrots, leeks, or onions. This broth then forms the base for dishes like our Sicilian BBQ plate. And have you ever noticed that the garnish for our Ajo Blanco consists of the green tops of carrots? By taking this approach, we reduce waste and give ingredients a second life in our dishes.
We also use food scraps creatively in flavorings like our no waste furikake and trash tajín. These include citrus scraps and leftover herbs that we dry and grind. Even the ends of the bread get a second life, we turn them into crispy croutons or flavorful pangrattato.
To prevent products from expiring, we work with a “Op = Op” mentality. We consciously maintain a low inventory so that we don’t have to throw anything away, and your meal at Gys is always fresh.
In everything we do, we critically assess our purchasing, make use of the entire product, and carefully adjust portion sizes. This way, we do our best every day to minimize food waste and cook sustainably, without compromising on flavor.

Recently, Gys has partnered with Oscar Circulair, a leader in business waste collection. At Gys, we separate as many materials as possible: plastic & drink cartons, glass, paper, metal, organic waste (swill), coffee grounds, wood, styrofoam, and residual waste. This is made possible by Oscar’s collection tools. Together, we save many resources from being incinerated!
